Bikaneri Parantha
Ingredients for Bikaneri Parantha Recipe

Maida – 500 gm

Bengal gram- 250 gm

Salt

Red chilly powder

Coriander powder – ½ tsp

Garam masala – ½ tsp

Oil – 200 gm
Method of Bikaneri Parantha Recipe
1. Mix together maida, salt, 2 tbsp of oil along with some water and knead it to make a smooth dough.
2. Soak Bengal gram for 6 hours and boil it in a pressure cooker for 1 whistle.
3. Grind the dal.
4. Heat 2 tbsp oil in a pan.
5. Add dal paste and roast it for 3-4 minutes.
6. Add red chilly powder, coriander powder and the garam masala powder and cook again
7. Allow this mixture to cool.
8. Stuff this paste into maida balls.
9. roll it in a paratha and roast it on a hot tawa with ghee
Aloo – Methi : North indian style potato dish with fenugreek leaves

Potatoes – 1/2 kg

Turmeric powder – 1/4 tsp

Salt – as reqd

Oil – 2 tbsp

Cumin – 1/2 tsp

Ginger – 1 tsp

Garlic – 1 tsp

Methi leaves – 2 bunches

Green chillies – 2 nos

Chilli powder – 1/2 tsp

Turmeric powder – 1/4 tsp
Method:
1. Take methi leaves without stem and wash, drain and keep aside.
2. Peel and dice potatoes.
3. Cook diced potatoes by adding little turmeric powder and salt.
4. When it is cooked, drain it and keep it aside.
5. Heat oil in a kadai, add cumin and fry chopped ginger, garlic and green chillies.
6. Add methi leaves, turmeric powder and chilli powder along with cooked potatoes.
7. Mix it well and keep it in a low flame for about 10 minutes
