Healthy Vegetarian Recipes ??? Really Easy To Prepare

I threw this together when we made a little more topping than we needed when making this apple pie for our Halloween party (which is also delicious, but that’s another story).

So, anyways: I don’t have an exact recipe for this, but Ill do my best.

Filling:
~3 cups peeled and sliced baking apples
1 can cherry pie filling
Juice of 1/2 lemon
1/4 teaspoon salt
1/2 cup flour

Topping:
1/2 cup flour
1 1/2 sticks butter
1 cup brown sugar
1/3 cup quick oats
1/4 teaspoon salt

1/2 cup chopped pecans

1. Cut & peel apples, and squeeze on lemon juice to prevent browning
2. Mix in can of cherry pie filling, flour, and salt.
3. Add mixture to a 9×9 baking pan
4. Make topping by mixing together all ingredients except butter. Cut butter into small pieces and cut in to mixture with forks (or if you’re me, with your hands)
5. Sprinkle topping mixture over fruit.
7. Optional: sprinkle 1/2 cup of chopped pecans over topping
8. Bake at 375 for about 30 minutes.

GO FOR IT. I might have some for breakfast.

So, I completely forgot about 30 days of Gratitude, but I REALLY want to do it, so I’m jumping in, a few days late. I guess I’ll be doing 27 days of gratitude?

This actually is happening at a really interested time – one of my colleagues at work just gave a presentation about the benefits of gratitude. Some of the the benefits are: Gratitude increase the ability to attain personal goals, Grateful people have a higher levels of life meaning and purpose, writing gratefully about a positive event enhances the postive meaning of the event. All in all, gratitude is linked to an overall healthy lifestyle with less stress.

So, that being said, this will be my first picture for the 30 Days of Gratitude Project.

This is a cobbler I made with my friends (who don’t live near by) this weekend, and I’m still feeling happy and relaxed after their visit. I’m grateful for getting to spend time with my good friends, enjoying tasty treats and having lots of fun. When there is a lot of stress in my life, it is nice to be surrounded by awesome people who make the world a better place.
