Mock Beef & Bean Vegetarian Chili1 can black beans, low sodium, drained and rinsed1 can red kidney beans, low sodium, drained and rinsed1 package of Veggie Ground mock beef, optional1 large onion, diced2 cans low sodium organic diced tomatoes with chilies1 handful frozen corn1 handful frozen peas1 small green pepper, diced1 8 oz container vegetable broth1/2 box of Barilla penne pasta1 packet of low sodium McCormick chili mix
Brown the onion, corn, peas, peppers, and mock beef in a large stock pot with 2 tablespoons of extra virgin olive oil. Cook through until onions are translucent and mock beef is heated throughout.Add in both cans of beans, tomatoes, seasoning packet, and broth. Bring to a boil, then let simmer for up to an hour.
Add in pasta 20 minutes before serving. Check half way through to ensure more water isn’t needed.Serve with a side of plain, low fat Greek yogurt, sodium free saltine crackers, and go veggie soy cheddar or pepper jack shredded cheese.
New York Style Dog & Kraut1 package hot dog buns, wheat1 package Go Veggie or Morningstar soy hot dogs1 jar sliced dill pickles1 small can sauerkrautSliced white onion, optionalMustardKetchup
Boil soy dogs according to package instructions and toast buns in the oven on broil. Heat up saurerkraut in a saucepan or in the microwave.
Assemble dogs onto the bun and add a thick layer of kraut, 2 slices of dill pickles, sprinkle of onions and condiments of choice. Serve alongside Lay’s original potato chips or chips of your choice.

Toast buns in the oven, microwave or fry the black bean burgers. Assemble the burgers according to individual preferences. Serve alongside with roasted red potatoes or home cut french fries rolled in olive oil and generously sprinkled with sea salt. Don’t forget the ketchup!
